What is Celery?

Celery is a cultivated plant of the parsley family with closely packed succulent leaf stalks which are used as a salad or cooked vegetable.. it is a small plant; reaching about half a meter in height and requires fertile, moisture rich soil to flourish. Several cultivars exist: The white celery is grown shaded from direct sunlight, thus has less chlorophyll, compared to its greener counter parts. The ribs of celery are crunchy and are often used to make soup or salad. It has a salty taste, so celery juice is a good mix with the sweeter fruit juices.
