What is Celery?

Celery is a cultivated plant of the parsley family, with closely packed succulent leaf stalks which are used as a salad or cooked vegetable.. it is a small plant; reaching about half a meter in height and requires fertile, moisture rich soil to flourish.Celery herb bears umbelliform flowers at the top of the stalk in the second year. Edible cluster of long, dark-green, somewhat hollow stalks grow upright from the crown of the plant. The stalks have a crunchy texture and a delicate, but mildly salty, taste. The stalks in the center are called the heart and are the most tender.

Several cultivars exist: The white celery is grown shaded from direct sunlight, thus has ess chlorophyll, compared to its greener counterparts.The ribs of celery are crunchy and are often used to make soup or salad. It has a salty taste, so celery juice is a good mix with the sweeter fruit juices. Depending on variety, some may taste very salty.
